Roast date: On all of our coffee bags, we provide you with a roast date. To get the best out of our coffee we aim to rest it for 7-14 days after roasting (depending on the type of coffee), this allows for the flavors to open up, offering much more clarity to your cup. 



Volcan Baru appellation corresponds to the entire production area around the slopes of the Volcano Baru located in the province of Chiriqui in the West of Panama. It’s a land of great richness, perfect for the production of exceptional coffee. Don Cubilla farm is located in the area of Chiriqui on the terroir of Piedra Candela. The surface area is 10 hectares, on a ground that is mostly sandy of volcanic origin.

Don Cubilla micro-lot preparation

This coffee is washed and then depulped. It then undergoes an 18-hour fermentation before being washed again. The drying is done in a mechanical dryer for 26 hours to obtain the perfect humidity rate.
