Don Cubilla

Volcan Baru appellation corresponds to the entire production area around the slopes of the Volcano Baru located in the province of Chiriqui in the West of Panama. It’s a land of great richness, perfect for producing exceptional coffee. Don Cubilla farm is located in Chiriqui on the terroir of Piedra Candela. The surface area is 10 hectares on a ground that is mostly sandy of volcanic origin.

This coffee is washed and then de-pulped. It then undergoes an 18-hour fermentation before being washed again. The drying is done in a mechanical dryer for 26 hours to obtain the perfect humidity rate.




We roast our coffee Mondays and Wednesdays! All weekly orders are dispatched twice a week Tuesdays & Thursdays. On all of our coffee bags, we provide you with a roast date. To get the best out of our coffee, we aim to rest it for 7-14 days after roasting (depending on the type of coffee); this allows the flavours to open up, offering much more clarity to your cup.
