Belco partner Jesus Salazar, Cafeologo, developed in 2010 in Chiapas a coffee-growing project involving the Mayan communities. He works directly with 140 micro-producers who cultivate high-quality coffee produced under the shade of the Mexican primary forest. Far from intensive production, each farmer produces about 20 bags per year. Jesus, the processor, accompanies them on the technical side of the process to create high-quality nano-batches, the best that we have tasted in Mexico for a long time! These are today 30 farmers partners of Cafeologo. Since the 2020 harvest, coffee has been bought in cherries at the price of parchment for 2 reasons: - Strongly encourage selective harvesting - A better income for farmers The Beneficio hosts numerous training courses for farmers (fighting against diseases like Broca or Ojo de gayo, improve agricultural practices with the size of coffee trees ...). We roast our coffee Mondays and Wednesdays! All weekly orders are dispatched twice a week Tuesdays & Thursdays. On all of our coffee bags, we provide you with a roast date. To get the best out of our coffee, we aim to rest it for 7-14 days after roasting (depending on the type of coffee); this allows for the flavors to open up, offering much more clarity to your cup.
